In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.
Fold the dry ingredients into the wet just until combined.
Chop the Oreos into small chunks (leave some for topping) and fold them in along with the white chocolate.
Scoop the dough into 8 portions and shape into tall mounds (flatten the top but keep them tall).
Bake at 375Β°F for 11β14 minutes, until the edges are set and the centers are still soft. Let cool to set the cookies!
