    In a bowl, add all of the chicken ingredients and mix well. Marinate in the fridge for an hour if time allows.

    Add the chicken to a pan skin side down and cook on medium heat for 7 minutes.

    Turn over the chicken and cook for another 5 minutes.

    In another pan, add the curry paste, ginger, garlic, soy sauce, stock, lime juice, and coconut milk. Mix well and bring to a simmer on medium heat for 10 minutes.

    Add the honey and cook for another 5 minutes on low heat until the sauce thickens slightly.

    Slice the chicken and serve with rice, pouring over the sauce and topping with garnishes.
