  • ·cup cilantro
  • ·garlic cloves
  • ·tbsp soy sauce
  • ·chili lime seasoning
  • ·onion powder
  • ·paprika
  • ·salt
  • ·pepper
  • ·cup roasted corn
  • ·cup cherry tomatoes
  • ·mini cucumber
  • ·cup roasted red peppers
  • ·cup black beans
  • ·cup red onion
  • ·tbsp cilantro
  • ·tbsp olive oil
  • ·tbsp rice vinegar
  • ·tsp Good Seasons Italian seasoning blend
  • ·tsp elote seasoning
  • ·cups white rice
  • ·tbsp cilantro
  • ·lime juice
  • ·salt

    Combine chicken with bouillon, lime juice, honey, cilantro, garlic, soy sauce, and seasonings. Marinate for at least 20 minutes. Reserve 1 tbsp of marinade for basting.

    Cook chicken over medium heat until fully cooked through, brushing with reserved marinade as it cooks.

    Toss all corn salad ingredients together in a bowl. Set aside.
