  • ·tbsp ginger-garlic paste
  • ·tsp Kashmiri red chilli powder
  • ·tsp regular chilli powder
  • ·tsp turmeric
  • ·tsp coriander powder
  • ·tsp cumin powder
  • ·tsp garam masala
  • ·tsp black pepper
  • ·tbsp rice flour
  • ·tbsp cornflour (or corn starch)
  • ·piece egg white (or curd)
  • ·tbsp lemon juice
  • ·salt
  • ·tsp oil
  • ·curry leaves
  • ·pieces green chillies

Instructions

    Marinate: Mix everything until thick and well-coated. Rest for 20–30 mins (or up to 1 hour).

    Air fry: Preheat at 350°F. Arrange pieces without overlapping, lightly oil spray. Cook for 12 minutes, flipping halfway.

    Optional crisp (if you want extra crunch): Air fry at 390–400°F for 2–3 mins.

    Final toss: Heat 1 tsp oil, add curry leaves + green chillies + minced garlic. Toss fish for ~20 seconds.
