Gulab Jamun Cake
A soft milk-based sponge cake infused with the rich aroma of gulab jamun, soaked in sweet sheera syrup.

- ·cup All purpose flour
- ·teaspoon Baking powder
- ·teaspoon Baking soda
- ·teaspoon Cardamom powder
- ·cup Ghee or melted butter
- ·cup Sugar
- ·cup Yogurt
- ·cup Milk
- ·teaspoon Rose water
- ·cup Sugar (for sheera syrup)
- ·cup Water
- ·teaspoon Cardamom (for sheera syrup)
- ·teaspoon Rose water (for sheera syrup)
- ·Saffron strands (optional)

Make sheera first: Boil sugar and water for 5 to 6 minutes until slightly sticky. Add cardamom, rose water, and saffron. Keep warm.

Make cake batter: Whisk yogurt, sugar, and ghee until smooth. Add milk powder, flour, baking powder, baking soda, and cardamom. Gradually add milk to make a thick but pourable batter like pancake batter. Add rose water.

Bake: Preheat oven to 170°C. Grease and line pan. Pour batter and tap pan gently. Bake for 30 to 35 minutes until toothpick comes out clean.

Soak with sheera: While cake is hot, poke holes with a skewer. Slowly pour warm sheera over cake. Let it absorb and rest for at least 1 hour.
