A delicious Kerala-style egg roast that is easy to make and perfect to serve with Appam or Idiyappam.


Ingredients (12)

  • ·pieces Eggs
  • ·pieces Shallots
  • ·cloves Garlic
  • ·inch piece Ginger
  • ·tsp Fennel seeds
  • ·sprig Curry leaves
  • ·medium Tomato
  • ·tsp Turmeric powder
  • ·tsp Chilli powder
  • ·Salt
  • ·tsp Garam masala
  • ·tbsp Coconut oil

    Boil eggs for 10 minutes. Cool, peel, make light slits and keep aside.

    Grind shallots, garlic, ginger, fennel seeds, curry leaves, turmeric powder, chilli powder & salt into a thick paste.

    Heat coconut oil in a kadai. Splutter curry leaves.

    Add masala paste and sauté on medium-low flame till raw smell goes and oil separates.

    Add tomato ketchup, roast 2–3 minutes till dark & glossy.

    Add boiled eggs and mix gently to coat well.

    Sauté 3–5 minutes, turning eggs carefully.

  8. 8

    Sprinkle garam masala and switch off flame.
