Spicy Chicken Fry

- ·salt
- ·tsp turmeric
- ·tsp chilli powder
- ·tsp garam masala
- ·tbsp ginger–garlic paste
- ·tbsp lemon juice
- ·cashews
- ·ghee
- ·oil
- ·star anise
- ·cinnamon
- ·curry leaves
- ·green chillies
- ·onions
- ·fresh coriander

Marinate chicken with salt, turmeric, chilli powder, garam masala, ginger–garlic paste, and lemon juice for 1 hour.

Heat ghee in a pan and fry cashews, then set aside.

In the same pan, add oil and sauté star anise and cinnamon.

Add curry leaves, green chillies, and onions. Cook until golden.

Add ginger–garlic paste and sauté until the raw smell disappears.

Add marinated chicken and mix well.

Cook on low flame until the moisture evaporates and oil starts to separate.

Add fried cashews, extra spices (optional), and cook for another 5 minutes.

Garnish with fresh coriander and serve hot.
