Shrimp & Avocado Bowls with Mango Salsa & Lime-Chili Sauce

- ·tbsp olive oil
- ·tsp chili powder
- ·tsp smoked paprika
- ·tsp garlic powder
- ·salt
- ·black pepper
- ·juice lime
- ·ripe mango
- ·red onion
- ·small (optional) jalapeño
- ·juice lime
- ·cilantro
- ·cup Greek yogurt or sour cream
- ·tbsp (optional) mayo
- ·zest + juice lime
- ·tsp chili paste / sriracha / chili powder
- ·salt
- ·(if needed to thin) water
- ·cilantro-lime rice / Quinoa / Cauliflower rice / Mixed greens
- ·sliced avocados
- ·extra cilantro
- ·lime wedges

In a bowl, combine shrimp, olive oil, chili powder, smoked paprika, garlic powder, salt, black pepper, and lime juice. Mix well.

Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until they are pink and cooked through.

For the mango salsa, combine diced mango, chopped red onion, minced jalapeño, lime juice, salt, and chopped cilantro in a bowl. Mix well.

For the lime-chili sauce, mix Greek yogurt or sour cream, mayo (if using), lime zest and juice, chili paste/sriracha/chili powder, salt, and a splash of water in a bowl until smooth.

To assemble the bowls, place a base of cilantro-lime rice, quinoa, cauliflower rice, or mixed greens in each bowl.
