Juicy Sheet Pan Middle Eastern Beef Kebabs
These kebabs are juicy and flavorful, seasoned just like my dad used to make. Serve them wrapped in warm lavash for a delicious meal.

- ยทunit white onion
- ยทunit red bell pepper
- ยทcloves garlic
- ยทcup parsley
- ยทtb tomato paste
- ยทtsp cumin
- ยทtsp paprika
- ยทtsp aleppo pepper
- ยทtsp ground black pepper
- ยทtsp kosher salt
- ยทunit persian cucumbers
- ยทunit red onion
- ยทunit roma tomatoes
- ยทtb sumac
- ยทtb red wine vinegar
- ยทtb avocado oil
- ยทcup greek yogurt
- ยทunit Persian cucumber
- ยทunit lemon
- ยทtsp kosher salt
- ยทunit lavash

Preheat oven to 375F.

In a small food processor, blend the onion, bell pepper, and garlic until liquidy.

Transfer to a bowl and use a paper towel to remove as much moisture as possible.

In a large bowl, combine the ground beef, onion/bell pepper/garlic mixture, parsley, and seasonings. Mix well.

Spread the beef mixture evenly in a flat layer on a greased quarter sheet pan.

Make cuts horizontally and vertically in the beef mixture.

Bake for 20 minutes, then broil for an additional 4-5 minutes until golden on top.

Remove from oven and cut along the horizontal lines to separate the kebabs.

For the salad, chop the cucumbers, red onion, and tomatoes. Toss with vinegar, avocado oil, sumac, and salt.

For the yogurt sauce, mix the Greek yogurt, grated Persian cucumber, lemon juice, and salt.

To serve, spread yogurt mixture on lavash, add 2-3 kebabs, and top with salad. Fold and enjoy.
