A flavorful Chicken Dum Biryani made with basic spices, perfect for Ramadan and Eid gatherings.

- ·tbsp ginger-garlic paste
- ·cup yogurt
- ·tsp red chili powder
- ·tsp turmeric powder
- ·tbsp coriander powder
- ·tsp garam masala powder
- ·tsp salt
- ·tsp cumin powder
- ·pieces bay leaves
- ·pieces cloves
- ·tsp cumin seeds
- ·pieces green cardamoms
- ·cup fried onions
- ·fresh coriander
- ·pieces green chilies
- ·tbsp lemon juice
- ·tbsp ghee
- ·cup oil
- ·strands saffron
- ·kg basmati rice
- ·cups water
- ·piece star anise
- ·piece black cardamom
- ·piece cinnamon stick
- ·tbsp salt
- ·lemon
- ·fresh coriander
- ·fried onions
- ·green chilies
- ·tbsp ghee
- ·food color
Instructions

Mix all the marinade ingredients with chicken. Keep aside for 2–3 hours or overnight.

Boil water with whole spices, salt, lemon, and coriander. Add rice and cook until 80–90% done. Drain and set aside.

In a large pot, heat some ghee/oil and sauté marinated chicken for 5–10 minutes.

Add a layer of rice on top.

Sprinkle fried onions, fresh coriander, green chilies, ghee, and optional food color.

Cover tightly and cook on medium heat for 10–15 minutes.

Serve hot with raita or salad.
