Andhra Style Green Chilli Chicken
A bold and spicy Andhra Green Chilli Chicken dish, marinated in a vibrant green paste and slow-cooked to perfection.

- ·g bone-in chicken
- ·pieces green chillies
- ·cup coriander leaves
- ·g cashew nuts
- ·tbsp water
- ·tbsp ginger–garlic paste
- ·tbsp dark soy sauce
- ·tbsp green chilli sauce
- ·tsp vinegar
- ·tsp turmeric powder
- ·tsp coriander powder
- ·tsp garam masala
- ·salt
- ·tsp ghee
- ·tsp cumin seeds
- ·medium onion
- ·cup water
- ·pieces green chillies
- ·sprig curry leaves

Blend green chillies, coriander leaves, cashews, and water into a smooth paste.

Mix the chicken with the green paste, ginger–garlic paste, soy sauce, green chilli sauce, vinegar, turmeric, coriander powder, garam masala, and salt. Marinate for 30 minutes to 1 hour.

Heat ghee in a pan. Add cumin seeds and let them splutter. Add sliced onions and sauté for 2–3 minutes until slightly softened.

Add the marinated chicken and mix well. Add a little water if needed, cover, and cook on low–medium heat for 25–30 minutes, stirring occasionally.

Check seasoning and finish with slit green chillies and curry leaves. Cook for 2 more minutes before serving.
