Crispy Nutty Bendekai
A lighter twist on the traditional South Indian wedding snack, this air-fried bendekai (okra) is nutty, crunchy, and totally addictive!
Ingredients (13)
- ·g bhindi/bendekai/Ladyfingers
- ·tbsp Rice flour
- ·tbsp Oil
- ·cup fried Bengal gram (Futana/putani)
- ·cup peanuts
- ·fried curry leaves
- ·fried red chilies
- ·tbsp dry grated coconut
- ·tbsp Red chili powder
- ·tsp Turmeric powder
- ·tsp Cumin powder
- ·tsp powdered Sugar
- ·Salt

Chop the Bindi into small pieces and transfer to a mixing bowl. Add rice flour and oil, then toss well until evenly coated.

Preheat the airfryer to 200°C and air-fry the coated Bindi for 10–15 minutes until crispy.

In the same mixing bowl, add roasted (or fried) fried Bengal gram (Futana), peanuts, fried curry leaves, fried red chilies & dry grated coconut.

Add the masala mix (red chili, turmeric, cumin, sugar powder, and salt) to the bowl.

Toss everything together thoroughly. If it feels a bit dry, add 1 tsp of oil and mix again.

Serve immediately or store in an airtight container once cooled.
