Maple Beef Bacon Jam
A delicious beef bacon jam perfect for burgers.

- ·oz beef bacon
- ·white onion
- ·oz black coffee
- ·tbsp maple syrup
- ·cup brown sugar
- ·salt
- ·black pepper
- ·cup mayonnaise
- ·tbsp yellow mustard
- ·tbsp bbq sauce

Mix the burger sauce ingredients together and set in the fridge to develop. Taste before adding salt and pepper and adjust to your preference.

Dice the bacon and cook in a heavy bottom pan over medium high heat for 10-15 minutes until mostly crispy. Remove and set aside to drain.

Remove all but 1 tbsp of the bacon grease, add diced white onion and sauté for 3-5 minutes.

Add black coffee, maple syrup, and brown sugar to the pan and bring to a simmer over medium low heat.

Add the beef bacon back in and simmer for about 40-45 minutes or until thickened and jammy. Add beef stock if needed for extra liquid.

Assemble the burgers starting with toasted buns covered in burger sauce, add pickles, patties, and spoon bacon jam on top.
