Ingredients (14)

  • ·pieces soft pitted dates
  • ·cup melted coconut oil OR cooled ghee
  • ·cup plain Greek yogurt
  • ·cup unsweetened almond milk
  • ·pieces large eggs
  • ·tsp vanilla essence
  • ·tsp cardamom powder
  • ·strands saffron strands
  • ·cup whole wheat flour
  • ·cup almond flour
  • ·tsp baking powder
  • ·salt
  • ·tbsp semi-sweet chocolate chips
  • ·tbsp chopped walnuts

Instructions

    Preheat oven to 350°F (175°C)

    Blend dates and almond milk until smooth

    Add oil/ghee, yogurt, eggs, vanilla, cardamom, and saffron to the blender and blend

    Mix dry ingredients separately

    Fold dry ingredients into wet ingredients gently

    If batter is thick, add 1–2 tbsp milk

  7. 7

    Pour batter into loaf pan

    Top with chocolate chips and walnuts

    Bake for 35–40 minutes

    Cool fully before slicing (important for protein texture)
