A delicious mini pizza topped with chicken filling, mozzarella cheese, and olives, perfect for any occasion.


Ingredients (24)

  • ·g all purpose flour
  • ·tbsp instant yeast
  • ·tbsp sugar
  • ·tbsp salt
  • ·cup oil
  • ·cup lukewarm water
  • ·milk
  • ·sesame seeds
  • ·egg wash
  • ·g mozzarella cheese
  • ·olives
  • ·oregano
  • ·tbsp oil
  • ·tbsp ginger garlic paste
  • ·g chicken boneless
  • ·salt
  • ·tbsp red chilli flakes
  • ·tsp black pepper
  • ·tsp dried fenugreek leaves
  • ·tsp paprika
  • ·tbsp malai boti masala
  • ·medium capsicum
  • ·ml dairy cream
  • ·cheese slices

    Prepare dough by mixing flour, yeast, sugar, salt and oil.

    Knead with lukewarm water to form a very soft and smooth dough. Place in a greased bowl, cover and let it rise until double in size.

    Divide into 8 equal balls (around 93-95 g each).

    Dip each ball in milk and coat completely with sesame seeds. Let them rest again for 10-15 minutes to relax the gluten.

    Press the center of each ball using a glass or bowl to create a deep well while keeping the sides thick.

    For filling: heat oil, sauté ginger garlic paste, add chicken and cook until color changes.

    Add salt, red chilli flakes, black pepper, dried fenugreek, paprika and malai boti masala. Cook 8-10 minutes until done.

    Add capsicum, cream and cheese slices. Cook on very low heat until cheese melts and mixture becomes creamy. Cool completely.

    Fill each dough base with prepared chicken. Top with mozzarella, olives and oregano. Brush sides with egg wash.

    Bake in preheated oven at 180°C for 20-25 minutes on medium rack with lower rod only. In the end, turn on upper rod for 3-4 minutes or until the top turns golden.
