  • ·yellow onion
  • ·medium carrots
  • ·garlic cloves
  • ·oz crushed tomatoes
  • ·cup beef broth
  • ·tsp garlic powder
  • ·tsp dried basil
  • ·tsp oregano
  • ·tsp Italian seasoning
  • ·tsp paprika
  • ·tsp red pepper flakes
  • ·tsp sugar
  • ·lb elbow pasta
  • ·tbsp unsalted butter
  • ·tbsp flour
  • ·cup half & half
  • ·cups heavy cream
  • ·oz cream cheese
  • ·tbsp sour cream
  • ·lb smoked Gouda
  • ·lb Vermont cheddar
  • ·lb sharp white cheddar
  • ·lb cream havarti
  • ·oz mozzarella cheese
  • ·tsp chicken bouillon
  • ·tsp onion powder
  • ·tsp smoked paprika
  • ·tsp mustard powder
  • ·to taste salt
  • ·to taste pepper

    Medium high heat pan add oil and sauté onion + carrots with salt until soft.

    Add garlic, cook 30 sec.

  3. 3

    Add beef, season, and brown.

  4. 4

    Deglaze with broth.

  5. 5

    Add tomatoes, seasonings, sugar.

  6. 6

    Cover, reduce heat to low, and simmer 25–30 min until thick.

    Boil pasta in salted bouillon water until just under al dente.

    Melt butter, add half the seasonings.

  9. 9

    Whisk in flour; cook 1–2 min.

    Add half & half + cream; thicken.

    Stir in cream cheese + sour cream.

    Add remaining seasonings.

    Melt in half the cheeses, adding in batches.

    Fold in pasta.

    Layer mac → meat → cheese.

    Repeat, finish with cheese.

    Bake at 375°F for 30 min, broil 3–5 min until golden.
