Boil potatoes in salted water until very tender (15β20 min).
Drain well.
Mash with butter, warm milk, garlic, salt & pepper. Keep warm.
Take steaks out of the fridge 20 minutes before cooking.
Pat dry and season generously with salt & pepper.
Heat a pan until very hot.
Add olive oil, then steaks.
Sear for 2β3 min per side (medium-rare). Don't move the steak while searing.
Add butter, garlic & herbs. Spoon melted butter over steak for 30 seconds.
Remove and rest for 5 minutes.
Slice steak against the grain.
Serve with mashed potatoes topped with bacon bits & parsley.
Spoon pan juices over the steak.
