A delicious and healthy low carb pasta salad packed with plant-based protein and fresh veggies.

- ยทoz Kaizen Lowcarb Pasta
- ยทhead green cabbage
- ยทpieces persian cucumbers
- ยทhandful chives
- ยทsmall shallot
- ยทpieces garlic cloves
- ยทhandful fresh basil
- ยทcup walnuts
- ยทcup olive oil
- ยทpieces lemons
- ยทtablespoons nutritional yeast
- ยทtablespoons rice vinegar
- ยทpinches salt

Boil an 8oz bag of Kaizen Lowcarb Pasta in a large pot of salted water for 8.5 minutes. Rinse well and let cool.

Finely chop half a green cabbage, 4 persian cucumbers, and a handful of chives. Add to a bowl.

For the dressing, blend 1 small shallot, 2 garlic cloves, a handful of chives, a handful of fresh basil, 1/3 cup walnuts, 1/3 cup olive oil, juice from 2 lemons, 3 tablespoons nutritional yeast, 3 tablespoons rice vinegar, and a couple pinches of salt until creamy.
