Crispy Mozzarella Chicken Sandwich
A delicious and crispy chicken sandwich topped with melted mozzarella and tangy slaw.

- ·large boneless, skinless chicken breasts
- ·cup buttermilk
- ·tsp garlic powder
- ·tsp paprika
- ·tsp salt
- ·tsp black pepper
- ·cup flour
- ·cup cornstarch
- ·tsp onion powder
- ·tsp cayenne
- ·for frying neutral oil
- ·fresh mozzarella slices
- ·cups shredded green cabbage
- ·cup shredded carrots
- ·tbsp mayo
- ·tbsp apple cider vinegar
- ·tsp Dijon mustard
- ·tsp honey or sugar
- ·brioche buns
- ·optional pickles
- ·optional hot honey
- ·optional spicy mayo

Mix buttermilk and spices. Add chicken and marinate at least 30 min (overnight = even better).

Mix flour, cornstarch, and seasonings. Dredge chicken, pressing coating on hard.

Heat oil to 350°F (175°C). Fry chicken 4–5 min per side until golden and cooked through. Rest on a rack.

While chicken is hot, add mozzarella and broil 1–2 min until melty and bubbly.

Mix shredded cabbage, carrots, mayo, apple cider vinegar, Dijon mustard, honey or sugar, salt & pepper until crisp, creamy, and balanced.

Assemble the sandwich: Bottom bun, chicken + melted mozzarella, pile on tangy slaw, top bun → gentle press.
