  • ·g raw prawns
  • ·unit lime zest
  • ·unit lime juice
  • ·unit long red chilli
  • ·clove garlic
  • ·tbsp coriander
  • ·tsp smoked paprika
  • ·tbsp olive oil
  • ·unit salt
  • ·unit black pepper
  • ·cup cooked pearl barley
  • ·handfuls rocket leaves
  • ·unit ripe peach
  • ·unit tomato
  • ·unit lime juice
  • ·tbsp honey
  • ·unit extra chilli
  • ·unit salt

    Peel and devein the prawns.

    Mix prawns with lime zest, juice, chilli, garlic, coriander, smoked paprika, olive oil, salt, and pepper. Let it sit for 5–10 minutes.

    In a hot pan, cook the prawns quickly for about 1–2 minutes per side until pink. Pour in the rest of the marinade and let it bubble for 30 seconds to become your sauce.

    In a big bowl, combine rocket, pearl barley, peach, and tomato. Add the warm prawns and all the spicy pan sauce.

    Finish with more chilli, lime juice, coriander, honey, and salt. Toss gently to coat.

    Serve warm or at room temperature.
