  • ·tbsp butter
  • ·tbsp olive oil
  • ·small onion
  • ·cloves garlic
  • ·cup mayonnaise
  • ·cup Mexican crema or sour cream
  • ·cup crumbled cotija cheese or feta
  • ·tsp chili powder or tajín
  • ·tbsp fresh lime juice
  • ·salt
  • ·fresh cilantro
  • ·smoked paprika, hot sauce, or jalapeño

    Heat butter and olive oil in a skillet over medium heat. Add onion; cook until soft (2–3 min).

    Add corn and cook 5–7 minutes, stirring occasionally, until lightly charred and fragrant. Add garlic; cook 30 seconds.
