A protein-packed, creamy filling for bagels that is easy to prepare and perfect for a quick lunch.


Ingredients (9)

  • ·g chickpeas
  • ·g vegan chorizo
  • ·piece red pepper
  • ·piece red onion
  • ·tbsp vegan cream cheese
  • ·piece lemon
  • ·tbsp sun dried tomatoes
  • ·tbsp smoked paprika
  • ·pieces parsley

    Preheat the air fryer to 220°C or preheat the grill.

    Add the drained chickpeas to a large bowl and roughly smash with a fork, leaving plenty of texture.

    Add the sliced chorizo, red pepper, red onion, cream cheese, sun-dried tomatoes, and smoked paprika.

    Zest the whole lemon and add the juice to taste, reserving a little for garnish later.

    Mix everything together until creamy but still chunky. Season well.

    Cover and pop it in the fridge until ready to use, or enjoy it as a cold sandwich filling.

    When ready to eat, take a quarter of the mix, smash it generously onto a bagel half, drizzle with a little oil.

    Air fry at 220°C for 5-7 minutes or grill for 3-4 minutes until hot and slightly crisp.

    Finish with a squeeze of the reserved lemon juice and chili oil.
