Sticky Soy Chicken & Chilli Oil Tomatoes
A high-protein dish featuring sticky soy chicken served with chilli oil-dressed tomatoes and sushi rice.

- ยทtbsp Dijon Mustard
- ยทtbsp Soy Sauce
- ยทtbsp Rice Vinegar
- ยทg Hot Honey
- ยทGarlic Clove
- ยทg Boneless Skinless Chicken Thighs
- ยทtbsp Vegetable Oil
- ยทEgg Yolks
- ยทg Cooked Sushi Rice
- ยทg Cherry Tomatoes
- ยทtbsp Chilli Oil
- ยทtsp Black Vinegar
- ยทtsp Togarashi
- ยทChives

To make the sauce, mix all the ingredients together in a bowl and set aside.

Roughly cut the tomatoes and dress in the chilli oil, black vinegar and salt.

Cut the chicken into bite-sized pieces.

Preheat a large frying pan over medium heat. Once hot, add the oil and chicken to the pan.

Cook over high heat, 80% on one side to get some good color. Flip and pour in the sauce.

Allow to reduce until sticky and glossy.

To plate, add the hot rice to a bowl, top with the chicken on one side and tomatoes on the other.

Spoon over the extra sauce and finish with chives, Togarashi, and an egg yolk.
