Sticky Sesame Cashew Chicken
A healthy weeknight win that comes together fast. High protein, packed with veggies, and coated in the dreamiest sesame peanut sauce.

- ยทtbsp olive oil
- ยทlb chicken breasts
- ยทcups broccoli florets
- ยทred bell pepper
- ยทcup snow peas
- ยทcloves garlic
- ยทcup unsalted cashews
- ยทgreen onions
- ยทtsp toasted sesame seeds
- ยทtbsp low sodium soy sauce
- ยทtbsp peanut butter
- ยทtbsp honey
- ยทtsp sesame oil
- ยทtbsp grated ginger

Over medium heat add 1 tbsp oil to a large skillet. Once hot, add chicken, salt, and pepper to taste. Cook until lightly browned, about 5 minutes. Transfer to plate and set aside.

Add another tbsp. oil to pan along with broccoli, bell pepper, and snow peas. Cook until tender, stirring frequently.

For sauce, whisk together all ingredients in a small bowl. Add a splash of water if a thinner consistency is preferred.

Add chicken back to pan along with garlic and mix together. Add cashews and pour sauce over top. Mix well and bring to a boil. Lower heat and simmer until sauce has thickened. Sprinkle with green onions and serve over rice.
