Endu Royyalu Chintaku Guddu Iguru
A delicious Andhra-style dish made with dry shrimp and boiled eggs, flavored with spices and garnished with fresh coriander.
Ingredients (11)
- ·packet Dry shrimp (Endu Royyalu)
- ·pieces Eggs
- ·pieces Onions
- ·pieces Tomatoes
- ·tbsp Ginger garlic paste
- ·tsp Turmeric powder
- ·Red chilli powder
- ·Salt
- ·tbsp Dry tamarind leaves powder (Chintaku podi)
- ·Oil
- ·Fresh coriander leaves

Soak dry shrimp in rice water OR curd + lemon juice + turmeric for 10–15 mins.

Wash thoroughly and pressure cook for 2 whistles. Keep aside.

Heat oil in a pan, add onions and fry till golden brown.

Add ginger garlic paste and sauté till raw smell disappears.

Add salt, turmeric and tomatoes. Cook till tomatoes turn soft.

Add cooked dry shrimp and red chilli powder. Mix well.

Cook till oil starts separating.

Add 2 tbsp dry tamarind leaves powder, pour a little boiling water.

Add boiled eggs, cover and cook on low flame till oil separates again.

Garnish with loads of fresh coriander leaves.
