Chorizo Gnocchi Bake
A quick, one pot, comforting weeknight meal that's easy to prepare.
Ingredients (12)
- ·g gnocchi
- ·garlic cloves
- ·onion
- ·red bell pepper
- ·g vegan chorizo
- ·g passata
- ·tsp smoked paprika
- ·tsp dried oregano
- ·tsp brown sugar
- ·vegan mozzarella
- ·fresh basil
- ·chilli flakes

Fry the onion & pepper until they begin to soften then add the garlic & continue to cook for another minute.

Add the paprika, oregano & sugar, toast off until fragrant then add the chorizo & stir to coat evenly.

Stir in the passata along with a splash of water to loosen, let it simmer for 5 minutes & season to taste.

Add the gnocchi, stir to coat everything in the sauce (add extra water so the gnocchi is just about submerged if the mixture is too dry).

Layer vegan mozzarella over the top then cover & bake at 180°C for 10-15 minutes until bubbling & the cheeze has melted.

Serve topped with fresh basil & chilli flakes (optional).
