Soya Masala Curry
A nutritious, protein-packed and flavourful curry made with soft soya chunks simmered in a creamy, aromatic masala paste.

- ·cup Soya chunks
- ·Water
- ·tbsp Oil
- ·medium, sliced Onion
- ·tbsp Dry coconut
- ·Cashew nuts
- ·Coriander leaves
- ·medium, chopped Tomato
- ·tbsp Oil
- ·tsp Cumin seeds
- ·chopped Green chillies
- ·tbsp Ginger-garlic paste
- ·tsp Turmeric powder
- ·tbsp Kashmiri red chilli powder
- ·tsp Coriander powder
- ·tsp Garam masala
- ·Salt
- ·tsp Sugar
- ·Hot water
- ·tsp Kasuri methi
- ·Chopped coriander leaves

Boil the soya chunks in water until soft, then drain.

In a blender, combine oil, onion, dry coconut, cashew nuts, and tomatoes to make a smooth masala paste.

In a pan, heat oil and add cumin seeds, followed by chopped green chillies.

Add ginger-garlic paste and sauté for a minute.

Stir in turmeric powder, Kashmiri red chilli powder, coriander powder, garam masala, salt, and sugar.

Add the masala paste and cook until the oil separates.

Add the boiled soya chunks and hot water to adjust the consistency.

Stir in kasuri methi and garnish with chopped coriander leaves.
