Tiramisu
A classic Italian dessert made with layers of coffee-soaked ladyfingers and a rich mascarpone cream.
Ingredients (10)
- ยทpieces eggs
- ยทcup caster sugar
- ยทtsp vanilla extract
- ยทg mascarpone
- ยทg thickened cream
- ยทcup black coffee
- ยทtbsp Frangelico or Kahlua
- ยทg lady fingers
- ยทlemon lemon rind
- ยทas needed cocoa

In a mixing bowl add the sugar to the egg yolks and beat on medium speed for around 10 mins.

With a few mins to go, add the vanilla extract and lemon rind if you choose.

Add the mascarpone and beat until just combined.

In a separate bowl beat the cream until completely thickened and stiff then fold slowly into the mascarpone mix.

Clean bowl and beat egg whites until stiff, fold in completely with mascarpone and cream mix.

Mix your coffee and Kahlua in a bowl.

Dip the lady finger biscuits in the coffee briefly (about a second each side) and line bottom of your dish.

Spread over half of the cream and top with another layer of coffee soaked biscuits.

Cover with remaining cream.

Cover and refrigerate for at least 12 hours, however for best results leave for over 24 hours.

When ready to serve add a generous amount of cocoa powder over the top.
