Silky Pasta with Roasted Pumpkin and Crispy Sage
A delicious plant-based pasta dish featuring roasted pumpkin, crispy sage, and a creamy sauce.

- ·salt
- ·black pepper
- ·g pappardelle pasta
- ·g Lurpak®️ Plant Based
- ·fresh sage leaves
- ·dried chilli flakes
- ·garlic clove
- ·tablespoons pecorino cheese

Preheat your oven to 180 degrees Celsius.

Place your pumpkin onto a large baking tray and season with salt, pepper, and a tablespoon of Lurpak®️ Plant Based.

Cover with foil and roast in the oven for 20-30 minutes or until soft. Remove and set aside.

Boil a large pot of salted water and cook the pasta according to al dente packet instructions. Strain and reserve 100ml of pasta water.

Meanwhile, melt the Lurpak®️ butter in a saucepan and add in your garlic, sage, and chilli flakes. Cook for 1 minute.

Add the roasted pumpkin and the reserved pasta water. Stir for a minute until the pumpkin just starts to break down and a sauce is formed.

Add the pappardelle to the sauce and stir for 1 minute.

Finish with grated Pecorino cheese, and enjoy!
