A delicious fusion of carrot cake and banana bread, this vegan recipe is easy to make and nut-free (optional pecans).

- ·pieces very ripe bananas
- ·cup maple syrup
- ·cup coconut oil
- ·cups self raising flour
- ·pieces carrot
- ·tsp cinnamon
- ·cup pecans
- ·tbsp vegan cream cheese
- ·tbsp vegan vanilla yoghurt
- ·tbsp maple syrup
- ·tsp cinnamon

Preheat oven to 180°C.

In a large bowl, mix together the bananas, maple syrup, coconut oil, and grated carrot.

Add the self raising flour, cinnamon, and optional pecans. Mix until just incorporated. Do not over-mix!

Pour the mixture into a prepared loaf tin.

Mix the topping ingredients together.

Bake for 40-45 minutes or until a toothpick comes out clean.

Once cooled, spread the cream cheese mixture on top and add extra pecans if desired.
