Greek Beef Wraps with Roasted Garlic Feta Sauce

- ·cloves garlic
- ·tsp dried oregano
- ·tsp paprika
- ·tsp ground cumin
- ·salt
- ·black pepper
- ·tbsp olive oil
- ·oz feta cheese
- ·cup Greek yogurt
- ·tbsp lemon juice
- ·pita bread or flatbreads
- ·cucumber
- ·cherry tomatoes
- ·red onion
- ·fresh lettuce or spinach
- ·fresh parsley or dill

Preheat oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft.

Squeeze roasted garlic cloves into a blender or bowl. Add feta, Greek yogurt, olive oil, lemon juice, and black pepper. Blend or mash until smooth and creamy. Set aside.

Heat olive oil in a pan over medium heat. Add garlic and ground beef. Season with oregano, paprika, cumin, salt, and pepper. Cook until browned and fully cooked, breaking it apart as it cooks.

Lightly warm pita bread in a pan or oven until soft.

Spread roasted garlic feta sauce on the pita. Add beef, cucumber, tomatoes, onion, and lettuce. Garnish with herbs if desired.
