Beef Ragù Pappardelle
A rich and hearty beef ragù served over pappardelle pasta, garnished with fresh parsley and Parmesan cheese.

- ·tbsp olive oil
- ·small onion
- ·garlic cloves
- ·small carrot
- ·tsp Italian seasoning
- ·tsp paprika
- ·tsp black pepper
- ·tsp salt
- ·cup crushed tomatoes
- ·tbsp tomato paste
- ·cup beef broth
- ·tbsp butter
- ·to taste fresh parsley
- ·for serving Parmesan cheese
- ·oz pappardelle pasta
- ·for boiling water salt

Heat olive oil in a skillet over medium-high heat.

Add onions (and carrots if using) and sauté for 3–4 minutes.

Add garlic and cook for 30 seconds.

Add ground beef, breaking it apart. Cook until browned.

Season with salt, pepper, paprika, and Italian seasoning.

Stir in tomato paste and cook for 1 minute.

Add crushed tomatoes and beef broth.

Reduce heat, cover, and simmer for 15–20 minutes until thick and rich.

Stir in butter for extra smoothness.

Boil pappardelle in salted water according to package directions (7–10 minutes).

Reserve ½ cup pasta water, then drain.
