A quick, nourishing one-pan dinner that combines golden courgettes, butter beans, and a creamy base, topped with a crunchy chilli pangrattato.

- ·tbsp olive oil
- ·courgettes
- ·garlic cloves
- ·tsp cracked black pepper
- ·g butter beans
- ·ml veg stock
- ·tbsp nutritional yeast
- ·lemon
- ·chives
- ·tsp chilli flakes
- ·g panko breadcrumbs
- ·salt
- ·pepper

Slice courgettes into thick rounds. Fry in olive oil for 7–8 mins until deep golden, flip, add garlic and black pepper, and mash lightly.

Stir in butter beans, vegetable stock, nutritional yeast, and juice of ½ lemon.

For the pangrattato, mix olive oil, chilli flakes, panko breadcrumbs, nutritional yeast, salt, and pepper.

Scatter the pangrattato mix over the beans and grill on high until golden and crisp.
