- ·tsp thyme
- ·salt

- ·cup Greek yogurt

- ·tbsp fresh dill or mint
- ·cup crumbled feta
- ·tbsp lemon juice

- ·diced tomatoes
- ·fresh parsley

Mix chicken with garlic, lemon zest, lemon juice, olive oil, oregano, thyme, salt, and pepper. Marinate for 15 minutes (or up to 4 hours).

Toss bell peppers with olive oil, salt, and pepper. Roast at 220°C (425°F) for 10–12 minutes until lightly charred.

Heat a skillet or grill pan over high heat. Cook chicken for 4–5 minutes per side until golden and fully cooked.

Combine yogurt, grated cucumber, garlic, dill/mint, feta, lemon juice, salt, and pepper. Mix until creamy.

Layer inside each warm pita: greens, lemon-garlic chicken, roasted peppers, onion, tomatoes, and a big spoon of feta tzatziki. Top with parsley and chili flakes if desired.
