Delicious pitas filled with marinated lemon-garlic chicken, roasted bell peppers, and creamy feta tzatziki.

  • ·cloves garlic
  • ·whole lemon
  • ·tbsp olive oil
  • ·tsp oregano
  • ·tsp thyme
  • ·salt
  • ·pepper
  • ·whole bell peppers
  • ·tbsp olive oil
  • ·small cucumber
  • ·cup Greek yogurt
  • ·clove garlic
  • ·tbsp fresh dill or mint
  • ·cup crumbled feta
  • ·tbsp lemon juice
  • ·salt
  • ·pepper
  • ·whole pita breads
  • ·lettuce or arugula
  • ·slices red onion
  • ·diced tomatoes
  • ·fresh parsley
  • ·chili flakes

    Mix chicken with garlic, lemon zest, lemon juice, olive oil, oregano, thyme, salt, and pepper. Marinate for 15 minutes (or up to 4 hours).

    Toss bell peppers with olive oil, salt, and pepper. Roast at 220°C (425°F) for 10–12 minutes until lightly charred.

    Heat a skillet or grill pan over high heat. Cook chicken for 4–5 minutes per side until golden and fully cooked.

    Combine yogurt, grated cucumber, garlic, dill/mint, feta, lemon juice, salt, and pepper. Mix until creamy.

    Layer inside each warm pita: greens, lemon-garlic chicken, roasted peppers, onion, tomatoes, and a big spoon of feta tzatziki. Top with parsley and chili flakes if desired.
