- ·brioche buns or sandwich rolls
- ·cup marinara sauce
- ·fresh basil or parsley

Make the Slaw: In a bowl, whisk mayo, vinegar, honey, salt, and pepper. Toss in cabbage and carrots. Chill while preparing chicken.

Prepare the Chicken: Season chicken cutlets with salt and pepper. Set up breading station: Bowl 1: flour, Bowl 2: beaten eggs, Bowl 3: panko, Italian breadcrumbs, garlic powder, paprika, oregano. Dredge chicken in flour → egg → breadcrumb mixture, pressing firmly.

Fry & Melt Mozzarella: Heat oil in a skillet over medium heat. Fry chicken 3–4 minutes per side until golden and cooked through. Place mozzarella on top, cover pan, and cook 1 minute until melted.

Toast the Buns: Lightly butter buns and toast in a pan until golden.

Assemble the Sandwich: Bottom bun → crispy mozzarella chicken → spoon warm marinara over chicken → add a generous layer of tangy slaw → garnish with basil if desired → top bun and serve immediately.
