Baked Chicken Burritos with Cheesy Green Chili Sauce

- ·cups cooked shredded chicken
- ·cup cooked rice
- ·cup black beans
- ·cup corn
- ·cup shredded cheese
- ·piece small onion
- ·cloves garlic
- ·tbsp olive oil
- ·tsp chili powder
- ·tsp smoked paprika
- ·tsp cumin
- ·salt
- ·pepper
- ·pieces large flour tortillas
- ·tbsp butter
- ·tbsp flour
- ·cups milk
- ·cup shredded cheese
- ·can (4 oz) mild chopped green chiles
- ·tsp garlic powder
- ·tsp onion powder
Instructions

Heat olive oil in a pan over medium heat.

Add onion and cook until soft, about 3 minutes.

Add garlic and cook 30 seconds more.

Stir in shredded chicken, rice, beans, corn, chili powder, paprika, cumin, salt, and pepper.

Mix well and warm through for 2–3 minutes.

Remove from heat and let cool slightly.

In a small pot, melt the butter.

Add flour and whisk for 1 minute to form a paste.

Slowly pour in milk while whisking until smooth.

Cook until slightly thickened.

Add cheese, green chiles, garlic powder, onion powder, salt, and pepper.

Warm tortillas slightly so they’re flexible.

Add a generous scoop of chicken filling down the center of each tortilla.
