Disneyland-Style Beef Birria Sandwich
A delicious beef birria sandwich inspired by Disneyland, featuring tender beef and melted cheese in a toasted roll.

- ·kg beef chuck or short rib
- ·whole onion
- ·cloves garlic cloves
- ·pieces dried guajillo peppers
- ·pieces dried ancho peppers
- ·pieces dried chile de árbol
- ·whole tomatoes
- ·leaf bay leaf
- ·tsp cumin
- ·tsp oregano
- ·tsp paprika
- ·salt
- ·pepper
- ·cups beef broth
- ·rolls crusty rolls or bolillo-style bread
- ·cups shredded mozzarella or Oaxaca cheese
- ·butter or oil
- ·sliced jalapeños or pickled onions

Make the Birria Base: Toast the dried chiles for 30–40 seconds in a dry pan.

Simmer chiles with tomatoes until soft (about 7–10 min).

Blend chiles, tomatoes, garlic, onion, cumin, oregano, paprika, salt & pepper into a thick sauce.

Slow-Cook the Beef: Add beef to a pot.

Pour the chile sauce over it.

Add beef broth + bay leaf.

Simmer 2.5–3 hours until the beef is fall-apart tender.

Shred the meat and keep the consommé (broth) for dipping.

Prepare the Bread: Slice rolls in half.

Butter and toast the inside until golden.

Lightly dip the outside of the bread in the consommé for extra flavor (optional but AMAZING).

Build the Sandwich: Add a thick handful of shredded cheese to the bottom half of the bread.

Pile on the birria beef.

Add more cheese on top (Disneyland uses LOTS).

Close the sandwich.

Toast / Grill: Toast the whole sandwich in a pan or press until the bread is crispy and the cheese is fully melted.

Brush lightly with consommé for extra flavor.

Serve With: A bowl of hot consommé for dipping, lime wedges, pickled onions, jalapeños, and cilantro.
